World-class ice wine from Canada, also known as "liquid gold", is made from grapes with thick skins that can withstand the harsh winters of Ontario. The white ice grapes are typically harvested in early spring (January), often during the coldest hours of the night to ensure the grapes remain frozen throughout the process. Due to the low temperatures and freezing, the juice extraction process is particularly lengthy, usually taking 4 to 6 hours. During the production of white ice wine, 30 pounds of grapes yield only 1/2 liter of grape juice, which is then filtered and fermented to create the perfect Canadian Vidal ice wine.
